A Great Recipe for Grilled Aubergine
This is one of the tastiest recipes I have come across. I could eat this every single day. Besides it is also easy and quick to prepare.

Ingredients
  • 1piece auberginesliced whatever way you prefer
  • 1clove garliccrushed
  • 2teaspoons cuminground
  • 1teaspoon basil leavescan be dried if you do not have the herb at home
  • 1-4teaspoons curry
  • 1-3teasponns salt
  • 2-4table spoons olive oilor any other oil you prefer

Grilled Aubergine
  1. For this recipe you will not need much: an aubergine, oil and some spices or fresh herbs if available. At the time of making I did not have any fresh herbs on hand so the dried variety did just fine. Wash the aubergine, and slice it (about 0.5 cm thick). Then go and get a bowl for the other ingredients.
  2. In the bowl, mix the oil with all the spices/herbs (basil, cumin, curry ) and depending on how many slices of aubergine you prepare, add more oil if needed. Now you need to get your hands dirty. Go for it and cover the sliced aubergine with the marinade. Leave it all in the bowl, and go do something else that needs doing or have a cup of java for at least 30 minutes. 🙂
  3. Prepare a baking sheet and line it with baking paper. Grease it with some oil and sprinkle salt on top. Then arrange the marinated aubergine on the baking sheet and sprinkle with more salt on top. That way there is salted on both sides. If you want, you can add more cumin and curry (I always do, as I like this combination).
Finishing the dish
  1. Preheat the oven to 220° C and bake/grill the aubergine for about 15-20 minutes until nice and soft. Simply check. When it is tender, it is done. Let it cool for a bit, put it on a plate and enjoy :-). I eat it as is without any sides but it is nice with steamed broccoli, for example.
